1/6 fl oz Giffard Vanille de Madagascar
1/6 fl oz Coconut rum liqueur (35-40% alc./vol.)
1/12 fl oz Butterscotch liqueur
2 fl oz Fiol Extra Dry Prosecco (chilled)
2/3 fl oz Thomas Henry Soda Water (chilled)

How to make

Glassware

Serve in an Old-fashioned glass

Prepare

  1. Select and pre-chill an OLD-FASHIONED GLASS.
  2. Prepare garnish of skewered raspberries.

Method

  1. STIR 5 ingredients (without ice).
  2. POUR into chilled glass already charged with prosecco.
  3. TOP with a splash of soda.

Created in 2013 by yours truly for Jamie's Italian Bars.

Review

Just like the eponymously named dessert, this slightly sweet spritz is flavoured with raspberry, almond, vanilla and coconut. Butterscotch liqueur adds a biscuity note.

If serving several of these, pre-mix the first five ingredients and use 40ml (1⅓oz) in each cocktail.

I used Chambord instead of the Giffard Creme de Framboise and omitted the soda water and had a very nice balanced drink, not overly sweet.
